New boba tea and froyo shop opens

Lindsay and Mike Barnett had an idea: open a business that is family friendly and that nobody had tried in Bandera. That was when the idea for Coconut Cowboys on Main Street in Bandera was born.
Last Sunday, the business had their grand opening on National Frozen Yogurt Day, and The Bandera Chamber of Commerce came by to lend their support to this new Bandera business.
The frozen yogurt shop carries six kinds of froyo, at least one of which is dairy free and/or sugar free. Also included in the mix is the trendy boba tea, which is made of tea, milk and bubbles. Edible sweetened pearls of tapioca (boba) can be added to the milk tea drink for extra taste.
Boba originated in Taiwan in the 1980’s so while the “trendy” drink is not a new one, it is new for Bandera. Coconut Cowboys carries nine different flavors of the milk tea.
Owner Lindsay Barnett said she and her family started work on the project in August when they bought the building and began some minor renovations to create a place where families could come in or teen could hang out.
Inside the shop has a warm comfortable feeling with leather couches and chairs. Wood tables give it a very modern vibe. The ambiance is cool, casual, and very friendly.
“I am happy to be a part of the community and provide a place that is family friendly,” said Lindsay.
The shop is located at 410 Main Street, and hours are from 11 a.m. until 6 p.m. Barnett hopes to extend the hours of operation when she can determine peak traffic periods. Right now, in the low season, she can see that the local business is crucial. She is preparing for large Mardi Gras crowds later this month.
“We have had a great local crowd. We have definitely felt the love,” said Barnett.
Food options remain limited to just a few snack foods available but the Barnetts plan to add bubble waffles, extra crispy waffles with large bubbles for toppings. They should be ready by Mardi Gras weekend.
“Coconut Cowboys is the perfect mix of tropical and cowboy at the same time,” said BHS Senior Luke Barnett. “It is a cool spot to hang out. There’s not that many places in Bandera to do that.”
